Gluten-Free Chocolate Crackle Slice

This gluten-free chocolate crackle slice is the ultimate 90s throwback. There was nothing better than seeing those bright, colourful muffin cases filled with chocolate crackles at every school party.


This time, instead of making them into individual serves, I’ve turned it into a slice version. It’s quick to make, no-bake, and always such a crowd-pleaser.

Ingredients

  • 4 Cups Gluten-free Rice Bubbles (I used Kellogg’s GF ones)

  • 1 Block Copha

  • 1 Cup Icing Sugar

  • 5 Tablespoons Cocoa Powder

  • 1 Cup Desiccated Coconut

  • 1 Block Toblerone (for topping)

Directions

  • Mix the dry ingredients
    In a large bowl, combine 4 cups gluten-free Rice Bubbles, 1 cup icing sugar, 5 tablespoons cocoa powder, and 1 cup desiccated coconut. Stir well to evenly distribute the cocoa and sugar.
  • Add the melted Copha
    Pour in 1 block of melted Copha and stir until everything is coated and the mixture holds together.
  • Press into the tray
    Line a slice tray with baking paper and press the mixture in firmly, smoothing the top with the back of a spoon.
  • Add the topping
    Melt your chosen chocolate (I used white Toblerone) and pour it evenly over the top of the slice. Smooth with a spatula.
  • Set and slice
    Refrigerate for at least 1 hour, or until firm. Slice into squares and store in an airtight container in the fridge.

Notes

  • What is Copha? Copha is a solidified coconut oil used in classic Australian no-bake desserts like chocolate crackles and slices. It gives that signature firm, crisp texture once chilled. You’ll find it in the refrigerated section near the butter.
  • Always check your Rice Bubbles are certified gluten-free.
  • You can use white, milk, or dark chocolate for the topping.
  • Keep chilled — it softens quickly at room temperature.
