Teriyaki Chicken Sushi

Something I really miss since being diagnosed with coeliac disease is pulling up to a sushi train restaurant and being able to pick anything off the train and eat it. And whilst most places offer gluten-free options, the risk of cross-contamination is so high that I’ve decided to bring the sushi train to my home.

I found this sushi train on Amazon, and for $45.00, I think it’s money well spent. It’s also a great way to entertain with friends, and my niece and nephew love it. Anyway, onto the best teriyaki chicken sushi I’ve made.

To make the sushi rice, I follow the 1 cup of rice to 1 1/4 cup water ratio. However, for the seasonings, check out the recipe below. The first time I made this, I was surprised by how much sugar it called for, so I reduced it, and it works great for me. Just make sure to wash the rice a few times first.

To make the teriyaki chicken, I’m using chicken thighs, just my personal preference, and then the sauce. This is the greatest teriyaki sauce I’ve found. It’s absolutely delicious. Perfect for this sushi, but I’ve also used it as a dipping sauce, in stir-frys, honestly, a 10/10, and it’s of course gluten-free.

To make the sushi, I’m using the greatest $10 Kmart product, the sushi-making kit. Also adding some avocado slices and Kewpie mayo. See the video at the bottom of the page to see how it works.

This recipe makes 5 long sushi rolls and 10 standard-sized pieces, just like the ones you see in sushi shops.

Ingredients

  • SUSHI RICE
  • 3 cups 3 Sushi Rice

  • 3 & 3/4 cups 3 & 3/4 Water

  • 3 Tbs 3 Sushi Seasoning

  • 3 Tbs 3 Sugar

  • TERIYAKI CHICKEN
  • 5 5 Chicken Thighs

  • 60 g 60 Kikkoman Teriyaki Sauce

  • ADDITIONAL ITEMS
  • Avocado

  • Kewpie Mayo

  • Yaki Nori Seaweed Sushi Sheets

Directions

  • Rinse the rice thoroughly until the water runs clear. I used SunRice sushi rice and followed their instructions, using 1 cup of rice to 1 ¼ cups of water. In total, I used 3 cups of rice.
  • Once the rice is cooked, transfer it to a large bowl. Add 3 tablespoons of sushi seasoning and 2 tablespoons of sugar. Mix well to combine. Place the rice in the fridge to cool completely before assembling.
  • Slice the chicken thighs into long, even strips so they can be laid neatly inside the sushi rolls.
  • Cook the chicken in a pan or pot over medium heat. Once it’s halfway cooked, add the teriyaki sauce and continue cooking until the chicken is fully cooked through. Set aside and allow to cool.
  • Slice the avocado and have your Kewpie mayonnaise ready.
