Gluten-Free Rocky Road

This is the best gluten-free rocky road I’ve ever made!

It’s a quick, no-bake gluten-free snack that tastes as good as it looks. Loaded with delicious fillings, chocolate, crunchy pretzels, lollies & marshmallows. It’s the perfect snack to make when catching up with friends or just something sweet to keep in the fridge.

This recipe is completely gluten-free and coeliac-friendly, using easily accessible supermarket ingredients.

For this recipe, I’m using a violet crumble, gluten-free red frogs (from the GF Lolly Co), and mini marshmallows (from Coles).

I also found these gluten-free Kit Kats from Woolworths (Free From Gluten Chocolate Wafers) and gluten-free pretzels. These are from the Wallaby brand, and they taste exactly how I remember pre-coeliac disease.

The best part about a rocky road is that you can change it to suit your own preferences. I love this gluten-free rocky road because it’s sweet, slightly salty from the pretzels and has the gummy lolly element too.

Ingredients

Directions

  • Line a slice tray with baking paper and set aside.
  • Melt the Toblerone chocolate in the microwave in 30-second intervals, stirring until smooth.
  • Chop the Violet Crumble, GF KitKats, GF red frogs, and pretzels into bite-sized pieces.
  • Add all chopped ingredients and marshmallows into the melted chocolate and gently fold until fully coated.
  • Pour the mixture into the lined tray and spread evenly.
  • Top with crushed mini eggs.
  • Place in the fridge for at least one hour or until set.
  • Slice into pieces and enjoy!
